Everyone loves having marshmallow chicks at Easter, right? But the thing about marshmallow is that it's a really fun, kind of edible craft and with a little creativity you can make marshmallow creatures in shapes of all kinds. So it all starts with making a great homemade marshmallow batter and you can find a recipe for one at CHOW.com. And once you have your batter together to make marshmallow chicks it's actually super simple. Just load the marshmallow batter into a piping bag fitted with a large round tip, about half an inch, and you want to prepare a baking sheet with colored sanding sugar. To form the chicks you want to pipe a sort of vertical S shape for each one. You want to kind of curve the batter and release pressure on the bag as you get about half-way through the curve so that you can create a little face and a beak on your marshmallow chick. And when you get them all piped you can coat them with more colored sanding sugar and let them sit for about six hours or so. And to put a little face on them you can pipe little dots of melted chocolate to make eyes. Cookie cutters are another great way to make all kinds of marshmallow shapes and creatures. Prep a baking sheet with non-stick cooking spray, spread your marshmallow batter in a nice even layer, and then you want to cover it with any kind of colored sanding sugar that you want and let this sit for about six hours. And once it's set, turn it out onto a cutting surface, cover it with more sanding sugar and then use any cookie cutters that you want to stamp out any favorite marshmallow shapes. Just make sure to roll them all in colored sugar or get all those sticky sides. So all that's left to do is serve them is serve them and impress people.
