This keto lemon blueberry mug cake has the perfect balance of sweetness to the lemon flavor and we also show you how to prevent the blueberries from sinking to the bottom. It is quite a large serving so you can easily make this two servings.

Serves 1 or 2

Nutritional Information for the whole recipe:
Cal: 289 | Net Carbs: 5g | Fiber: 2g | Total Carbs: 7g | Fat: 24g | Protein: 12g

Ingredients:
26g/4 tbsp Almond Flour
2g/1 tsp Coconut Flour
½ tsp Baking Powder
Pinch Salt
25g/3 tbsp Sweetener
44g/1 Egg
1 tsp Lemon Rind, finely grated
22g/2 tbsp Lemon Juice
20g/2 tbsp Cream
10g/1 tbsp Oil
½ tsp Vanilla
20g/2 tbsp Blueberries

COCONUT FLOUR VERSION:
Replace the 28g of Flour (above) with 2 tbsp Coconut Flour, then follow the next steps in the method. I found I needed to microwave for an extra 30 seconds for the cake to cook in my 700w microwave.

LUPIN FLOUR VERSION:
Replace the 28g of Flour (above) with 4 tbsp Lupin Flour, then follow the next steps in the method.
