Garden eggs stew is a Ghanaian delicacy enjoyed with a variety of starches such as rice, yam, plantain, etc. My rendition of this classic elevates the flavors and brings a slew of textures that literally takes this one note textured stew to the next level! Enjoy!!

Ingredients:

10 garden eggs or an equivalent 1 big purple egg plant
1/2 cup palm oil
1/2 white onion
A blended mixture of the following: 1/4 red onion, 1 habanero chili, pinch of aniseed, 1 scallion or spring onion, small piece of ginger, 2 cloves of garlic, 1 teaspoon of dawadawa (locust bean)
Small piece of momoni (fermented fish)
1 tablespoon of cray fish powder
1 cup of home made tomato sauce
10 jumbo prawns shelled, and deveined
1 grilled mackerel
1 cup sliced white mushrooms
1 cup fresh spinach
Garnish: 1/4 red and green bell pepper, and 1/2 red onion.
