Roast pork in the air fryer results in wonderfully moist, tender meat and perfect crunchy crackling, with a cooking time of just 55 minutes for a 1kg (2¼lbs) joint.
I've perfected this recipe after trying many different methods, and let me tell you that this resulted in the perfect crackling joint that was far superior to any pork joint I've ever cooked in my oven.
Guidelines:
1. If you don't have a 'Roast' function on your air fryer, just use your regular 'Air Fry' function. The 'Roast' setting on many new air fryers has a slightly less fierce fan and does give a better result, but it shouldn't be a probem. Just keep an eye on the joint, particularly during the second cook and maybe do a temperature check if you're worried about it being a little overdone. Stick your probe thermometer into the thickest part of the meat and if it reaches 65°C/149°F it's done.
2. This is a for 1kg joint. As a general guide, work on a cooking time of 25 minutes per 450g/1lb of meat. The first 25 minutes should be cooked hot at 200°C/390°F and whatever the remaining time is should be cooked at 160°C/320°F.
For example:
If you only had a small 450g/1lb joint, simply cook at 200°C/390°F for 25 mins. (25 mins total)
For a 900g/2lb joint, cook at 200°C/390°F for 25 mins, then 25 mins at 160°C/320°F. (50 mins total)
In the video, I use a 1kg/2.25lb joint so cooked at 200°C/390°F for 25 mins, then 30 mins at 160°C/320°F adding the extra 5 minutes to the second cooking time to account for the extra 100g. (55 mins total)
3. Oil: I used refined 'light in colour' olive oil. Do not use extra virgin - it'll burn. Use an oil with a high smoking point, such as vegetable, rapeseed, sunflower or light coloured olive oil that is suitable for frying/roasting like I did.
4. Salt: Use plenty, but don't over do it. The salt I used in this video was quite coarse and was made up of quite hard crystals. I did get a little bit of crystalisation between the scoring at the ends of the meat, which was not so much of a problem if you like it a little salty like I do, but just be aware, you can overdo it if you're not careful.
