Ingredients
5 cups fresh cherries pitted and halved
1 1/4 cups all purpose flour (160g) divided
1 cup granulated sugar (200g) divided
1 teaspoon baking powder
1/4 cup buttermilk
1 egg
2 tablespoons oil
1 teaspoon vanilla extract
Instructions
Preheat oven to 375 degrees F and lightly grease an 8×8″ baking dish or a 2-3 quart casserole dish.
Place cherries, 1/4 cup (35g) flour and 3/4 cup (150g)sugar in the baking dish and stir to combine.
In a medium bowl, stir together remaining 1 cup (125g) flour, 1/4 cup (50g) sugar, and baking powder until combined. Add in buttermilk, egg, oil and vanilla and stir until moistened.
Drop batter by tablespoonfuls over the cherries and bake for 40-45 minutes until topping is golden brown and cherries are thickened and bubbly at the edges.
Serve warm with ice cream or as desired
