Interview with a Japanese Blacksmith: Hiroshi Kato. Hiroshi Kato-san has been making handmade Japanese kitchen knives for decades, and now sits as one of the senior blacksmiths at Takefu Knife Village, in Echizen, Japan. He is best known for creating the Masakage Yuki and Koishi, and for his own brand Kato knives. Nowadays his former apprentice and son-in-law, Yoshimi Kato, runs the shop but Kato-san is still very involved in operations. In this interview, Kato-san tells us what's great about working in Takefu village, his initial reluctance to become a blacksmith and why he's grateful to the younger blacksmiths he works with.
