⭐The history of almond tofu
The history of almond tofu is said to date back to the Three Kingdoms period of China (220–280), when there was a doctor called Dongfeng. Together with Hua Da and Zhang Zhong Jing, they are called "Jian'an Three Theological Doctors" (three famous doctors who were active in the post-Kanan). Dongfeng treated many sick people every day in Lushan, a famous mountain in southern Jiuji City, Jiangxi Province, south of China, but said he would not receive medical treatment fees and said, "If healed, please plant an apricot tree after my house." After a few years, one side became a big apricot forest. And before I knew it, there were hundreds of thousands of apricot trees. Dongfeng put up a sign saying, "If you want an apricot, don't worry about me. If you put a can of grain in my warehouse, you can have the same amount of apricot." Installed in the forest. And he provided all the obtained grain to the poor and travelers.
According to this legend, "Kyorin(apricot trees)" has become synonymous with a morally high-ranking doctor. The seeds of apricots are called "Kyonin", Kyonin is used as a traditional medicine for coughing, asthma, and constipation. However, Kyonin had a strong bitterness and did not easily fit the taste of people. Therefore, sweetness and milk were added to powdered Kyonin to make them easier to eat. That is the origin of "almond Tofu".As a medicinal dessert, its deliciousness has spread nationwide. In the Qing dynasty, it was served as a dessert for the highest peak of court cuisine, "Manchu–Han Imperial Feast" by the emperors and queens.
⭐杏仁豆腐的歷史：
相傳東漢末年，三國時期，有一位神醫叫做董奉。他醫術高明，和華佗，張仲景並稱“建安三神醫”。董奉不但醫術神妙，更是行善如流。
他給窮人看病，分文不取，只要求對方病癒後，在他家後面的山上種下一棵杏樹。久而久之，董奉家的後山有了一大片的杏林，滿山都是杏仁果子。
董奉把這些杏仁果收集起來，放到家門口的糧倉裡，讓因為戰爭而流散的饑民免費取食。而杏仁磨成粉之後，也被用作治療咳嗽、哮喘和便秘的民間藥物，但是杏仁本身味道偏苦，於是大家就在杏仁粉中加入了甜味的奶，其實更加易於使用，這就是“杏仁豆腐”的起源。
后世，由于董奉高尚的品格，中国人都用“杏林春暖”来形容医生救死扶伤的义举。“杏林”也成了中药行业的代名词。而杏仁豆腐，作为一种药用的甜点，它的美味传遍了全中国。到了清朝，它成了“满汉全席”中的一道甜点，供皇帝和贵族们享用。
⭐杏仁豆腐の歴史
杏仁豆腐の歴史は、中国・三国時代（220–280年）まで遡れるとされており、当時、董奉（とうほう）という医師がいた。華陀、張仲景と共に「建安三神医（後漢の建安に活躍した3人の名医）」と称されている。
董奉は、廬山（中国南方の江西省九江市南部にある名山）で、毎日多くの病人を治療したが、治療費は受け取らず、「もし治ったら、杏子の木を植えてください」と言った。重病患者が治ると杏子の樹を５株、病状が軽い人の場合は１株植えてもらった。数年が過ぎると、一面は盛大な杏の林となっていた。そして、いつのまにか杏の木は数十万本にもなったとのこと。董奉は、「もし杏がほしい人がいたら、私にことわる必要はありません。一缶分の穀物を私の倉庫に置いていけば、同じ量の杏をもっていって結構です」という看板を杏の林に設置。そして、得た穀物をすべて貧しい人や旅人に提供した。時にわざと穀物を少なくし、杏を多く持って帰る者もいる。そのときは杏林の虎が追いかける。また、杏を盗む者は虎に噛み殺されてしまう。盗人の家族が董奉に詫びをいれると、董奉は盗人を生き返らせるのだ。
この伝説から「杏林」が道徳の高尚な医者の代名詞となったが、実は、杏仁豆腐も「董奉の杏林の杏種で生み出した」と言われている。杏の種は「杏仁(キョウニン)」と呼ばれ、『肺と腸を潤す働きがある』とされていた。咳止めや喘息、便秘に良い民間薬として今も用いられている。しかし、「杏仁(キョウニン)」を服用するにはひとつ問題があった。杏仁は苦味が強く、なかなか人々の口に合わなかった。そこで、粉末状にした杏仁に甘味や牛乳を加えて食べやすく加工した。それが「杏仁豆腐」のはじまり。薬膳デザートとしてその美味しさは全国的に広まり、宮廷にも伝わった。そして、清代には宮廷料理の最高峰「満漢全席」のデザートとして、皇帝や妃たちに供されるまでになった。

南杏 50克
水 300-350毫升
牛奶 200毫升
糖 30克
瓊脂 4克
可用桂花蜜點綴，或糖水枸杞搭配

⭐Ingredients:
Sweet apricot kernels 50g
Water 300-350ml
Milk 200ml
Sugar 30g
Agar-agar 4g
Serve with osmanthus honey or goji and syrup
