📒 Preparation - MASALA VADA | CHANA DAL VADA | PARUPP VADAI

Wash and soak Chana dal in water for 2 hours
Drain the water and transfer to a mixie jar
To 300 gms of CHANA DAL | Bengal gram, add 6 cloves of GARLIC
Add 1 inch of roughly cut GINGER
Add 1 tbsp of FENNEL SEEDS
Grind until Medium coarse texture
If required, scrape the sides and grind the mixture again. It should be okay if a few whole dal remains
Dont add water while grinding
Add Salt as required
Add 5 sprigs of finely chopped CURRY LEAVES
Add 6 finely chopped GREEN CHILLIES
Add 2 medium sized finely chopped ONIONS
Add 1 tbsp of FENNEL SEEDS
Mix well
Dont add extra water to the vada mix. The onions will release water
Combine with hands, if required
Heat oil for deep frying in a heavy kadai or wok
Adjust the flame to Medium
Flatten the vada and carefully slide it in the hot oil
After frying them for a few minutes, flip them over and continue frying the other side
Fry until they become golden and crisp
Serve Hot
