For this recipe we kick a turkey breast up a little!
We started first by making our bacon weave. It sounds a little complicated but it couldn’t be more simple. Just lay out 4-5 strips of bacon and pull back every other strip. Lay an additional strip of bacon the opposite way of the starting 4-5. Repeat the process until the weave is done.
Next we season the turkey. We used Meat Church Honey Bacon BBQ Rub, but use whatever flavor you like on poultry. Once both sides are seasoned, place the turkey top side down on the bacon. Next, flip the turkey so that bacon weave sits on top. Hit the bacon with a little more rub and fire up the cooker.
We did this recipe on the Big Green Egg, but you can use any smoker or grill. Just set it up for indirect heat and hold the temps a 300*. Just before adding the turkey to the grill, we put on a small chunk of Hickory wood for smoke flavor. Place the turkey on the grate. Since this is a quick cook, put the probe in the meat from the beginning. This will save you from having to keep opening the lid.
Once the internal temp hits 165* internal, remove the turkey from the grill and let rest 10-15 min on the cutting board.
Slice and serve is all that’s left. Make sure you get some of that bacon with the turkey!
