These Potato Skins are seriously the most amazing snack and to think they are made with something most people will simply throw in the trash.

Potato skins Ingredients:
4 cups frying oil (I used avocado oil)
however many potato peels you have and simply garnish with
Parmigiano Reggiano (from Italy)
Rosemary salt (recipe and video below)
Fresh ground black pepper
Dash of white truffle oil

Rosemary salt recipe- Blend for 1 minute
7 sprigs of rosemary stripped
4 sprigs of sage stripped
1/2 cup+2tbsp kosher salt
2 cloves garlic
1/2 lemon zest
