Ingredients for Gram Flour Mixture:
Gram flour 2 cups
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Salt 1 tsp
Ginger garlic paste 1 tbsp
Yogurt 1 ½ cup
Water 1 cup
Carom seeds 1 tsp
Ingredients for Kadhi:
Oil 1/4 cup
Onion (sliced) 1 cup
Green chilies (chopped) 1 tbsp
Coriander seeds (crushed) 1 tbsp
Fenugreek seeds 1 tsp
Cumin seeds 1 tbsp
Black peppercorns 1 tbsp
Dried Red whole chilies 3-4
Curry leaves 5-10
Gram flour mixture
Ingredients for Pakora:
Onion (chopped) 1/2 cup
Potatoes (small cubes) 1/2 cup
Spinach (chopped) 1/2 cup
Green coriander (chopped) 1/4 cup
Green chilies (chopped) 1 tbsp
Ginger garlic paste 1 tbsp
Carom seeds 1 tsp
Turmeric powder 1/2 tsp
Salt 1 tsp / to taste
Gram flour 1 cup
Water as required
Ingredients for Tarka:
Ghee 1/4 cup
Dried Red whole chilies 2
Cumin seeds 1 tbsp
Red chili powder 1 tsp
Directions for Gram Flour Mixture Preparation:
1. In a bowl add gram flour, red chili powder, salt, ginger garlic paste, yogurt, water, carom seeds and mix it well. Set aside.
Directions for Kadhi Preparation:
2. In a pot heat oil and add onion, green chilies. Cook for a minute.
3. Add coriander seeds crushed, fenugreek seeds, cumin seeds, black peppercorns, dried red whole chilies and cook for 1-2 mins. Add curry leaves and mix them well.
4. Now add gram flour mixture and cook over medium flame for 25-30 mins. Let it cook while preparing pakora.
Directions for Pakora Preparation:
5. In a bowl add onion, potatoes, spinach, green coriander, green chilies, ginger garlic paste, carom seeds, turmeric powder, salt, gram flour, water and mix it well.
6. In a deep pan heat oil and add the spoon full of prepared batter. Cook until golden brown in color and fully done. Your pakora are ready.
7. Add these pakora in the kadhi and mix them well.
Directions for Tarka Preparation:
8. In a pan heat ghee, add dried red whole chilies, cumin seeds, red chili powder and cook for few seconds. Your Tarka is ready.
9. Pour it over the kadhi and your Kadhi Pakora in Punjabi Style is ready.

Besan 2 cup
Laal mirch powder 1 khanay ka chamach
Haldi powder 1 chaye ka chamach
Namak 1 chaye ka chamach
Adrak lehsan ka paste 1 khanay ka chamach
Dahi daidh cup
Pani 1 cup
Ajwain 1 chaye ka chamach
Kadhi banana ke ajza:
Khanay ka tail 1/4 cup
Pyaaz (katti hui) 1 cup
Hari mirch (katti hui) 1 khanay ka chamach
Dhaniya (Pissa huwa) 1 khanay ka chamach
Sukha dhaniya 1 chaye ka chamach
Methi dana 1 chaye ka chamach
Zeera 1 khanay ka chamach
Kali mirch 1 khanay ka chamach
Sukhi surkh mirchen 3-4
Kadhi patta 5-10
Baisan mixture
Pakoray banana ke ajza:
Pyaaz (katti hui) 1/2 cup
Aloo (chotay cubes) 1/2 cup
Palak (katti hui) 1/2 cup
Hara dhaniya (katta hua)1/4 cup
Hari mirch (katti hui) 1 khanay ka chamach
Adrak lehsan ka paste 1 khanay ka chamach
Ajwain 1 chaye ka chamach
Haldi powder 1/2 chaye ka chamach
Namak hasb e zaiqa
Baisan 1 cup
Pani hasb e zarurat
Tarka banana ke liye ajza:
Ghee 1/4 cup
Sukhi surkh mirchen 2
Zeera 1 chaye ka chamach
Laal mirch powder 1 chaye ka chamach
Tarkeeb:
1. Baisan mixture bannay ke liye aik bowl me baisan, laal mirch powder, namak, adrak lehsan paste, dahi, pani or ajwain daal kar achi tarhan mix krlen.
2. Kadhi banana ke liye aik bartan me khanay ka tail garam kar ke is me pyaaz or hari mirchen daal kar 1-minute tak pakayen. Ab ismay peesa huwa sukha dhaniya,methi dana, zeera, kali mirch or sukhi surkh mirchen daal kar aik se 2 minute tak pakayen. Ab ismay kadhi patta daal kar achi tarhan mix karlen.
3. Phir is me baisan mixture daal kar darmiyani anch par 25–30-minute tak pakayen.
4. Pakoray bannay ke liye aik bowl me pyaaz, aloo, palak, hara dhaniya, hari mirch, adrak lehsan ka paste, ajwain, haldi powder, namak, baisan mixture or pani daal kar achi tarhan mix krlen.
5. Ab aik pan me khanay ka tail garam kar ke is me tyaar batter se bhara huwa chamach daalen or golden brown honay tak fry kar len. Pakoray tyaar hain.
6. Phir pakoron ko kadhi me daal kar achi tarhan mix karen.
7. Tarka bannay ke liye aik pan me garam ghee kar ke ismay sukhi surkh mirchen, zeera or laal mirch powder daal kar chand seconds tak pakayen. Tarka tyaar hai.
8. Ab tarkay ko kadhi par daalen. Mazedaar Punjabi style kadhi pakora tyaar hai.
