Mustard oil is the olive oil of India. It’s a general purpose oil in that it is used to fry, as a finishing oil and also as a tempering tool with spices.

Mustard oil is very viscose and rich. It heats beautifully and carries flavour to ensure a really long last of aromatic punch. The flavour profile of mustard oil is hot and floral and pungent. It draws out those same qualities in the spices and produce with which it is paired.

I love to use a half cup mustard oil in with vegetable oil whenever I am deep frying in order to add more texture and flavour to the food that kisses the oil.
