Step-by-step recipe for Seviyan Kheer:
▪️Heat a heavy bottomed pan.
▪️Heat 1 tbsp ghee.
▪️Add chopped dry fruits and fry until light golden.
▪️Add some raisins and sauté until they turn plump.
▪️Remove and keep aside.
▪️Add 1 tbsp ghee to the same pan.
▪️Add 1/2 cup seviyan (vermicelli)
▪️Roast for 2-3 minutes until it becomes golden.
▪️Pour 1 litter milk and mix.
▪️Let the milk come to a boil. Stir and make sure there are no lumps.
▪️Simmer and stir occasionally. Cook till the vermicelli is soft and cooked.
▪️Add roasted dry fruits and 10-12 saffron strands. Mix everything well.
▪️Add 1/2 cup sugar and mix until the sugar dissolves.
▪️Cook for another 2 minutes.
▪️Add 1/2 tsp cardamom powder and mix everything well.
▪️Serve hot, warm or chilled.
