BRAIN MASALA
INGREDIENTS:-
Brain masala 500g
Oil half cup
Ginger garlic paste 1tbsp
Tomatoes 4
Onion 2
Curry leaves 10
Green chili 12
Zeera half tsp
Methi Dana half tsp
Tumeric 1tsp
Salt 1tbsp
Garam masala half tsp
Crushed chilli half tsp
Black pepper half tsp
METHOD:
Pour oil in the pan and add zeera and methi dana and onion with ginger garlic paste and mix it well till brown then add the chopped tomatoes and all spices and mix it well for about 3 min then take the mutton brain masala in another pan pour some water add salt in it and boil it for 10 minutes
After this take the boiled brain masala and add this to the pan and cook it for about 15 minutes then garnish it with coriander ginger green chili
Now the brain masala is ready to serve

CHICKEN KAJU HANDI
INGREDIENTS:-
CHICKEN 1 KG
Kaju 200 g
Tomatoes half kg
Yoghurt 100 g
Brown onion half cup
Red chilli 1tbsp
Salt 1tbsp
Tumeric half tsp
Garam masala half tsp
Dry methi half tsp
Ginger garlic paste 1tsp
Cream 1packet
Crushed chilli half tsp
METHOD:-
For the marination take the chicken and add all the spices in it and add yoghurt and mix it well and leave it for 1 hour
Pour some oil in the pan and add chopped tomatoes and brown onion then add green chili and mix it well after this take the marinated chicken and add it to the pan and leave it for 15 minutes now add the kaju paste in the pan and add garam masala and leave it for 10 minutes Now the kaju chicken karahi is ready to serve

PRAWN TEMPURA
INGREDIENTS:-
Prawns 1kg
Salt 1tbsp
Sugar 1tbsp
Vinegar 4tbsp
Soy sauce 4tbsp
Flour 2 cup
Rice flour 1 cup
Corn flour 1
METHOD:
First we have to cure the prawns and for the prawns curing we have to pour some water and add vinegar salt sugar in the bowl and leave it for half an hour now for the batter take a bowl and add flour,rice flour,corn flour and mix it well now take the cure prawns and dip into the batter and fry
The prawns tempura is ready to serve with mayo sauce
