Ingredients:
Pork Bafat Recipe:
1 kg pork (preferably with bone for more flavor), cut into chunks
2 tbsp bafat powder (adjust to taste)
4 large onions
2 inch ginger
5 green chilies, slit (optional, for extra heat)
1 garlic pod
2 cinnamon stick
2 bay leaves
2 tbsp Vinegar /Tamarind pulp [adjust as per the taste]
salt to taste
To prepare Bafat Powder
1.5 tbsp coriander seeds
1 tsp cumin seeds
1 tsp black peppercorns
12 dried [baydgi] red chilies (adjust based on heat preference)
5 short red chillies
1/2 tsp turmeric powder
1-2 cinnamon sticks
5-6 cloves
1 Star Anise
1 Bay leaf
Instructions:
Roast Spices: In a dry pan over medium heat, roast the coriander seeds, cumin seeds, black peppercorns, dried red chilies, cinnamon sticks, cloves. Stir frequently to prevent burning until they become fragrant (about 2-3 minutes).
Cool and Grind: Allow the spices to cool completely. Then grind them into a fine powder and add turmeric powder and mix well.
Store: Store the bafat powder in an airtight container in a cool, dry place. It should keep well for several months.
