Culinary Cooking Technique for how to prepare glazed Vichy Carrots, French Vegetarian Side Dish;
Please allow me to show and share with you, a culinary cooking technique for how we can prepare fresh carrots to Vichy Carrots.
General Information:
Vichy carrots is a French vegetarian side dish
For this dish you can use whole carrots, cut carrots or shaped carrots
Here the Steps and the recipe which I show in the Video:
Wash your Carrots
Cut of the stalk
Bring the carrots in shape, or cut them or just peel them and use the whole carrots
Heat up a pan
Add the butter and onion and saute all for 2 minutes
Add the condiments and the brown sugar
Add the carrots and saute them for 1 more minute
Add the sparkling water and cover the pan
Let all cook for 2 to 3 minutes
Serve and garnish with chopped parsley
Ingredients you need for the recipe I show in the Video:
400 g fresh carrots
2 g brown sugar
60 g butter or ghee
80 g white onion (fine diced)
5 g Fresh Parsley (Fine chopped)
3 g salt
½ g ground nutmeg
½ g ground white pepper
100 ml sparkling water
Additional advises:
Make sure you don't overcook the Carrots
If you peeled your carrots then use the skin for broths
If you had cut your carrots into shapes, then use the cut offs for broths or to make a carrot soup
