Tomahawk Steaks with a Garlic and Herb Compound Butter
1 Tomahawk or Cowboy Steaks
2-3 Tbsp Olive Oil
2 Tbsp Each of Salt, Pepper, and Garlic Powder (might need more depending on size of the steak)
Garlic and Herb Compound Butter
1 Stick of Unsalted Butter, Room Temperature
2 Tbsp Fresh Parsley (Chopped)
2 Tbsp Fresh Rosemary (Chopped)
3 Garlic Cloves, Minced
1 tsp Salt
1. To a mixer with a paddle attachment, add all the ingredients for the Garlic and Herb Compound
Butter. Mix until combined. To a large piece of plastic wrap, add the butter to the middle and roll
into a log. Seal in the plastic wrap and place in the freezer for 1 hour. After the hour, remove
from the plastic wrap and cut into ½ inch round disk. Store in the refrigerator until ready to use.
Freeze in an airtight container for up to 3 months.
2. Pull the steak out and let it sit at room temperature for 30 minutes.
3. Cover with olive oil, salt, pepper, and garlic powder. Cover every inch of the steak, including the
bone.
4. Pre-heat grill or smoker to 350 degrees. Prob the steak with a meat thermometer. Place the
steak, bone facing you, long ways (vertical) onto the grill. Cook for 5-7 minutes, then pick up and
turn your steak 90 degrees to where the steak bone is horizontal. This will create those beautiful
steakhouse cross hatch grill marks. After 5-6 minutes, flip the steak over starting at the bone
being vertical and repeat. Watch the internal temperature and adjust the timing for the cross
hatches.
5. For the last 2 minutes of cooking, place two disks of compound butter on top of the steak.
6. For steak temperatures, rate 125 degrees, medium rate 135 degrees, medium 145 degrees,
Medium Well 156 degrees, and Well Done 160 degrees. Remove steak 3-5 degrees before it
reaches your desired temperature as the steak will carry over cook while it rests.
7. Pull steak from the grill and let it rest on a cutting board for 10 minutes.

Notes:
• Personally, the bone has some of the best chard flavors of this steak. I eat the meat off of that.
• This will feed around 2-3 normal people. AKA, not my husband, as he eats one by himself.
• I have found this cut of meat on sale at Sam’s and Costco for cheap. We also have run across
them at Kroger’s on sale.
• We smoke ours on a Rec Tec Smoker with the Rec Tec Grill Grates.
• These steaks are very large and thick. Like we like them here in Texas! They will take anywhere
from 25-35 minutes to cooking, of course, depending on your desired internal temperature.
