Today’s video is Basque cheesecake. I also made citrus marmalade to add some texture.
This recipe is so easy, quick (except chilling time), and it is gluten free!
You can enjoy when it is slightly warm inside, but I like it when it is cold.
I love the creamy texture inside, and burnt caramel taste on top.
Pair it with champagne, semi-sweet white wine, or sparkling sake.

221g granulated sugar
330g heavy cream
200g eggs (4 large eggs)
18g corn starch
1ea vanilla bean
