Ingredients:
2 cup cashew nut
4 tbsp shaved pistachios
3/4 cup sugar
15 - 20 saffron threads
1 tbsp milk
1 tsp cardamom pow
2tbsp clarified butter
1. Grind cashewnuts into fine pow. Don’t grind continuously, else it will leave the oil.
2. Then take a heavy bottom pan & add sugar & 1/2 cup water to make sugar syrup.
3. Simmer it till 1 thread consistency . Add saffron ( Previously I soaked saffron threads in 1 tbsp milk) .
4. Then add cashew pow in the syrup & cook on low flame by stirring continuously.
5. Add cardamom pow. Now you see paste will leaving the pan, immediately tranfer the paste into greesed plate.
6. Let it little bit cool down, to be knead easily by hand .
7. Roll into ball with hands, then place the mixture ball on greased paper & roll out gently with rolling pin into square shape . Sprinkle rest shaved pistachios, then again roll it.
8. Then cut in desired shape.
9. Serve mouth watering kesaria kaju pista barfi.
