2-3 servings
Ingredients
1/4 cup olive oil
2 cloves garlic, finely minced
1/4 cup shredded parmesan
1 tsp Italian seasoning
Pinch of salt
12 mini potatoes, halved
Instructions
1. Preheat oven to 400F and set aside a small baking dish
2. In a bowl, mix together oil, garlic, parmesan, Italian seasoning, and salt. Spread that evenly in the baking dish.
3. Wash and cut potatoes in half and assemble them cut side down in one even layer. If you have extra potatoes just throw them on top.
4. Drizzle on more olive oil and add a good pinch of salt. Add a sprinkle of more shredded parmesan.
5. Bake about 25-30 minutes until potatoes are tender and crispy. Enjoy!
