Ingredients
*Serves 4 people.
4 chicken legs, thighs or breast.
* 2 Red onions
* 2 eggs - which will be boiled and cut in quarters
* 10 black olives
* 3 potatoes which will be boiled, cut to serve with.
* 1 clove of fresh garlic
* 2 ts of yellow Peruvian pepper paste
* 3 el Red wine vinegar
* Cumin to taste
* Turmeric
* Salt
* Black pepper to taste
* Cook white rice if you want to serve the escabeche with.
* Leaves of lettuce( living lettuce or romaine)
* Avocado or vegetable oil
