There was a time in my life that I stayed for work in the Northwest of China for several months and we oftenly eat Xīnjiāng shou zhuā fàn or Xinjiang Lamb Rice. I love it so much that I made a promise to myself to learn how to cook this local favourite dish the Uyghur authentic way. Here's my version of this dish and I hope you'll love it too.
Ingredients:
400 grams lamb meat (fatty part)
2 cups of rice
3 medium carrots
2 medium yellow /white onions
1 teaspoon cumin powder
2 tablespoons sichuan/szechuan peppercorns
Salt, to taste
Oil, vegetable/sunflower
