These delicious pork chops are sure to be a favorite as soon as you try these for yourself. Don't rush the process, give the pork chops time to get that beautiful color and to cook thoroughly. Maintain control of the heat so you don't burn your sauce and you'll be enjoying these chops in no time at all!
250 grams Pork chops
25 grams Butter
20 grams Wine, white
.5 t Paprika, smoked
100 grams Honey
2 T Garlic, minced
a/n Salt, kosher
a/n Black pepper, ground
1. Preheat sauce pan or cast iron pan on medium to medium high heat.
2. Season pork chops with salt and pepper.
3. Add oil into pan and allow oil to heat up and runs freely in the pan.
4. Place pork chops into pan to sear and caramelize. Do NOT move once placed in the pan.
5. Allow to cook for a a few minutes, depending on thickness of the pork chop, before turning over.
6 If desired, do the same with the edges of the pork chop as well.
7. Once the pork chops have been seared, remove from the pan, set aside and reduce heat to low.
8. Make sure the pan is not still hot and add your butter and garlic.
9. Saute together for a min or so until the garlic becomes fragrant. You will smell the garlic cooking.
10. Now add the smoked paprika, combine and cook for an additional minute.
11. Deglaze the pan by adding the white wine. Scrape up the fond (food bits stuck to the pan) and let the wine reduce to half.
12. Add the honey and stir together, let the sauce slowly thicken and cook down.
13. When reduced by half, add the pork chops back in and allow the pork chops to cook to a minimum of 145 degrees F.
14. Plate the pork chops and pour the sauce over the top and enjoy!
