Love the color of this soup, makes me happy!
So Healthy + Delicious. Kids love it.
Serves Up to 4 people
Recipe :
1/2 red Cabbage
1 red onion
100g Turkey Bacon
1 Tbsp of Nutmeg
100ml of Veggie Broth
200ml Coconut Milk
200ml Soy milk or any other Milk
Sunflower oil or any other oil for High Heat
Pepper
Slice the red cabbage and onion + the turkey bacon. Set aside
Then put in the pan the onion to cook ,medium heat for ~10min. Add the turkey bacon and keep cooking for another 5min.
When ready, add the red cabbage on top of the onions and Bacon , then add the liquids ( Veggie Broth/Soy Milk/ Coconut milk).Sprinkle with Nutmeg and Pepper. Make sure to Stir frequently until the red cabbage gets soft. Expect cooking time for another 10min.
When the cabbage becomes soft , turn off the heat and add the whole mixture in a blender with the remaining liquid in the pan.
Blend it and serve :)
For toppings you can add some herbs or add some of the fried Turkey bacon to give extra flavor.
I added Cilantro, love the smell of this herb and fits great with this soup.
