Mutton Ghee Roast:
Ingredients
Whole red chilies long one 8
Clarified butter ¼ cup
Coriander powder 2 tbsp
Cumin 1 tbsp
Whole black pepper 1 tsp
Garlic 8 cloves
Cloves 6
Tamarind pulp ¼ cup
Turmeric ¼ tsp
Yogurt ½ cup
Boiled mutton ½ kg
Jaggery 2 tbsp
Salt 1 tsp
Curry leaves 15
METHOD
Dry roast on tawa, whole long red chilies and remove, then add clarified butter in a fry pan and roast all the rest, put in a grinder and grind well. Heat clarified butter in a pan, fry grinded masala with chilies, add turmeric, yogurt, fry well, add boiled mutton with jaggery, salt, curry leaves, cook till masala well coated, remove and serve.
Murgh Khaas:
Ingredients
Boneless chicken ½ kg cubes
Allspice ½ tsp
Chili powder ½ tsp
Salt 1 tsp
Ginger garlic paste 1 tbsp
Orange color ¼ tsp
Yogurt 2 tbsp
Vinegar 1 tbsp
Egg 1
Corn flour 3 tbsp heaped
METHOD
Marinate chicken with all the given ingredients for 30 mins, then deep fry and keep aside.
Ingredients for Masala
Oil ¼ cup
Coriander leaves 2 tbsp
Green chilies 4 sliced
Yogurt ¼ cup
Ketchup 2 tbsp
Chili sauce 2tbsp
Garlic crushed 1 tbsp
Ginger crushed 1 tbsp
Tomatoes 2 blended
Curry leaves 15
METHOD FOR MASALA
Heat oil in a wok, add crushed ginger garlic, curry leaves, green chilies, add in blended tomatoes, fry well, add yogurt and all the rest, fry till oil comes on top.Lastly add fried chicken with chopped greens and leave it on dum for 5 mins, serve with paratha.
Mango Bon Bon:
Ingredients
Mango jelly 1 packet dissolved in ¾ cup water till semi set
Mango chopped 2 cups
Cream cheese 6 ounces
Marshmallow 1 cup
Flour 3 tbsp
Mango juice 1 cup
Sugar ¾ cup
Whipped cream 1 cup
METHOD
Put chopped mangoes onto each dessert cups, top with mango jelly and leave it to set. Dissolve marshmallows with whipped cream and top this over jelly, put to chill. In a sauce pan mix together mango juice, flour and sugar, cook stirring continuously, remove, cool, add the beaten cream cheese to the sauce pan and mix well, pour this hot mixture over the marshmallow mixture, they will melt slightly, decorate with whipped cream and mango slices, serve and enjoy.
