MISUNDERSTOOD: difference between glucose in blood
& carbs in diet…
-some cells have total reliance on glucose
Example: red blood cells must use glucose for energy
Also: kidney and brain have a few
Does Not Mean Carbs Are Required
Our LIVER makes ALL WE NEED
If we eat fewer carbs, brain will say
"I will burn ketones”
"There Is NO ESSENTIAL CARB”
Carbs spike insulin; high insulin causes insulin resistance..
'But, what about peoples who eat tuberous veggies?’
-Their fasting insulin levels are exquisitely LOW
-processed carbs have HIGHER INSULIN SPIKE than
natural carbs
Example: baked potato vs chips
Spiking Insulin Too Often causes
insulin resistance
Seed oils: we eat thousands of times more than ever…
Body reacts to:
-high glucose---it knows what to do
-high seed oils---More Pathogenic, more HARM
Because most prevalent fat in seed oil is so
READILY OXIDIZED--turns into
liquid peroxide
-this damages the body anywhere!
-DNA, proteins, mitochondria, nucleus
The degree to which seed oils contribute to
insulin resistance [IR] is less clear
-but, ANY FAT will do that if infused directly into blood
-the body must burn that fat, so turns of glucose burning
by inducing IR
When you put seed oils on cells, it
does not induce IR, but other effects:
High ingestion of seed oils puts high
amounts of fats into fat cells, causing
hypertrophy: Unhealthy Fat Cells
