:: Crispy Potato Tacos ::
INGREDIENTS
(for tacos dough)
Maida- 2 cups
Baking soda- ½ tsp
Salt- 1 tsp
Ghee- 4 tbsp
Water to knead
(for stuffing)
Oil- 2 tbsp
Sliced onions- ½ cup
Chilli flakes- 1 tsp
Salt to taste
Boiled potatoes - 2 cups
Chopped coriander leaves- ¼ cup
(For assembling)
Tomato ketchup- ¼ cup
Grated cheese- 1 cup
Oil to Roast
PROCESS
(for tacos)
1. Take maida, baking soda, salt & ghee into a bowl. Now, gradually add water into it & make a soft & smooth dough with it.
2. Rest it for 10-15 mins.
3. After 15 mins, take a little dough. Roll it into a thin tortilla/ chapati.
4. Now, heat a tawa, and roast tortilla/ chapati over it from both sides for a few seconds.
(For stuffing)
1. Heat a pan. Add 2 tbsp oil into it. Add onions into it & saute it until onions turn translucent. Sprinkle some chili flakes & add salt into it.
2. Now, add mashed potatoes & chopped coriander leaves into it. Mix everything well & stuffing is ready.
(Assembling)
1. Take roasted Tortilla/Chapati.
2. Spread tomato ketchup over it.
3. Put grated cheese on half of the tortilla. Now, put potato stuffing over grated cheese. 4. And grate some more cheese over the potato stuffing. Likewise, prepare the remaining. And flip the other half over the stuffed one.
5. Now, heat some oil in a pan for shallow frying.
6. Place prepared tacos in the hot oil. And shallow fry them from both sides until nicely crisp.
Serve tacos with some ketchup or coriander mint chutney.
