Spaghetti Aglio e Olio
90 ml Olive oil
1 Tbs mince garlic
1 handful of fresh parsley
Handful of rock salt
Pepper
300g spaghetti
Optional: 1 Tbs Chilli flakes
Optional 1 Tbs breadcrumbs
Throw the pasta in when the water is boiling and add salt.
In another pan add the olive oil until it covers the bottom of the pan and the minced garlic on medium heat. Also add 1 Tbs water to stop the garlic from burning.
Add the 1 handful of chopped parsley stalks. This gives a lot of flavor.
At this point you can optionally add a few tsps of chili flakes and breadcrumbs.
After 3 minutes of cooking on low medium heat, add 1/2 cup of pasta water to the oil.
Start adding the pasta to the sauce and mix all around to finish cooking.
Then add the rest of the parsley and mix it all together.
Serve it as a volcano. Scoop the pasta in a ladle and turn at the top with a fork.
Then sprinkle parsley and cracked pepper and optional chili flakes.
