Data Chorchori is a classic dish in bengali homes. This is not the first time I have mentioned this, and probably not the last, that Bengalis, whether Indian or Bangladeshi don't waste any food materials. I presume it is true for many Staes in India, or the whole of India. Let me know how you cook Cauliflower and its peripherals. I am very proud of this sustainable cooking culture.
Recipe :
300g Cauliflower stem
45g Cauliflower leaves
150g Potato
150 g Pumpkin
100g Brinjal/Eggplant
75g Broad beans
45g tomato
5 green chilies
1 tsp Sugar
1/2 tsp salt
1 tsp Black mustard seeds
1/3 tsp white mustard seeds(or 1 tsp of whatever you have)
2 tbsp poppy seeds
1/4 - 1/2 turmeric powder
1/2 Bengali Panchforon
2 Dried red Chilis
3 tbsp mustard oil
Steps:
1. Slice Cauliflower stems as shown in the video and boil in slated water.
2. Boil and cook Sliced potato wedges until al dente
3. Grind together mustard, poppy seed, and green chilies into a smooth paste. It is better to soak them 30 mins prior. Drain the water and mix and grind in a mixer
4. In a pan or pot, heat 3 tbsp mustard oil
5. Add Paanch foron, dry red chili, and temper for 30 seconds.
6. Add the cooked potato wedges, and fry until edges are golden brown.
7. This steps is optional, and I don't do it. But my mother in law does - she individually fries each vegetable until golden on the edge. Each should take 1-2 mins on medium heat
8. Back from step 6, add the pumpkin, brinjal, broad beans, and cook them for 5-7 minutes.
9. Stir a few times so they don't stick at the bottom of the pan.
10. Add tomatoes, salt, sugar, and turmeric. Stir and mix well. Again cover with a lid for 2 mins on medium heat.
11. Add the cooked cauliflower stems, and leaves into the pot. Add the poppy seed-mustard paste.
12. Stir until mixed throughly. and cover with a lid. Let it cook for 3 mins on medium heat.
13. Add 1 cup of water and let it cook until all the vegetables are completely cooked. Finally, reduce 1/2 the amount of water left on high heat. It shouldn't take more than 3-4 minutes.
14. Serve with hot rice.
