Chocolate Cheesecake
Ingredients
For the crunch
24 chocolate sandwich cookies
60 gr butter
For the cheesecake
1/4 cup heavy whipping cream
1 cup semi-sweet chocolate chips
8 oz cream cheese
1/2 cup sour cream
1/2 cup mascarpone
1 cup granulated sugar
3 eggs
2 tbsp cocoa powder
Orange zest or extract
Vanilla
For the ganache
1 cup chocolate chips
3/4 cup heavy whipping cream
Instructions
Preheat the oven to 340F.
In a food processor, add the sandwich cookies and melted butter and process until well blended.
Wrap a 7" springform pan with two layers of heavy-duty aluminum foil. Make sure to cover the underside of the pan and around the sides of the pan.
Then transfer the mixture to the springform pan and press the crumbs into the pan.
Bake for about 8 min. Remove from the oven and set aside.
Preparing the cheesecake
In a small bowl, add chocolate and heavy cream and microwave for a few seconds until melted and stir.
In a large bowl, add room temperature cream cheese, sour cream, mascarpone, sugar, and whisk.
Add eggs one at a time and mix well. Add cocoa powder, vanilla, and orange zest and stir.
Pour the melted chocolate and mix until combined well.
Pour the mixture into the springform pan.
Bake for about 60-70 min in a water bath (bain-marie), and chill at least 4-5 hours or better overnight.
The next day, transfer the cheesecake to a serving plate.
In a small bowl, add the chocolate and heavy cream and microwave for a few seconds until melted and stir.
Pour the ganache over the chilled cheesecake. Serve with raspberry.
