Rava idli originated in Bangalore (Bengaluru) MTR hotel. And the MTR rava idli is famous to this day for their soft and perfect rava idli. This rava idli recipe is a must try whether you love mtr rava idli, or even if you have never tried it! If you have never tried rava idli, you will be surprised how easy it is to prepare it. Suji ki idli without eno recipe is also instant because we don’t have to wait for overnight fermentation process.
What is rava idli?
Rava idli is a very popular and healthy breakfast from Karnataka. Idli is steamed cake from India which is very light, soft and has unique light taste to it. Rava or sooji means semolina. So suji ki idli is prepared using semolina, curd, spices and optional veggies. This is special idli variation, as the traditional idli is generally prepared using idli rava or idli rava, doesn’t add any spices or veggies, and goes through overnight fermentation process.Whereas we can prepare suji idli in less than hour, which is why it is called instant idli recipe.

Now let’s see how to make suji ki idli recipe in hindi.
How to make rava idli?
To prepare rava idli we first fry cashews in ghee and keep aside. Then we will fry spices, chana dal, ginger, semolina in the same pan and let it cool. Make sure that the heat is set to low or low to medium. Sooji should be roasted well, but it should not change the color. Then we add curd or yogurt to this mix and let it sit for some time. Another note - curd should be fresh, without any sourness.
Then we add some baking soda and some water and mix it well to prepare instant idli batter. The consistency of idli batter should be same as that of traditional idli batter, it should not be runny, as well as too thick. Please watch the video to see how I have done it.
Then we apply ghee to the idli plates, keep a roasted cashew at the center, and add batter. Then steam it for about 10 minutes, and the perfect soft rava idli are ready!

Small (Bombay) Rava / Semolina 1 cup
Curd 1 cup
Cashew 10
Mustard seeds 1 tsp
Chana dal 1 tbsp
Black pepper 15
Green chilli 3
