Many gardeners pull their garlic too soon in Zones 9 and 10. Although you CAN pull them as early as March, you miss out on critical growing seasons that make them bigger and give them more complex flavors. Before you harvest, you should turn your water off 4-6 weeks prior. This helps to dry the papers and allows for easier peeling.
We only recommend harvesting in late spring if you need the space for other crops, are dying to use your garlic, or have any pest or disease pressures. If none of this applies, leave your garlic in the ground to mature fully, and you will NOT be disappointed.
