Raspberry parfait with homemade coconut yoghurt m
Ingredients
1 cup of raspberries
4 tbsps of chia seeds
1 tbsp of maple syrup or sweetener of choice
2 tbsp of distilled water
6 tbsp of coconut yoghurt (homemade - I can share a coconut yoghurt video)
1 tsp of vanilla
Method
1. Add raspberries to a blender with water and maple syrup. Blend into a purée
2. Add chia seeds and fold in until slightly thickened
3. Leave to rest for 20 mins
4. Add small handful of raspberries to the chia mix for more texture
5. In a glass jar add l coconut yoghurt layer with raspberry mix followed by coconut yoghurt
6. Add the final layer of coconut yoghurt or raspberry mix followed by granola mixed omega seeds, fresh mint and the rest of the raspberries✨
This can be made in advance and stored in the fridge for 2 days. Enjoy!✨✨
