Chicken and Soba Noodle Stir Fry
Ingredients:
• 8-10 oz (225-280 g) Soba noodles
• 1 lb (450 g) chicken thighs, skinless, boneless, sliced into small pieces
• 2-3 carrots, julienned
• 4-6 green onions, julienned
• 1 large bell pepper (any color) or 2-3 small, julienned
• 1/4-1/2 savoy cabbage, julienned
• 3 cloves garlic, minced
• 2 tbsp (30 ml) soy sauce
• 2 tbsp (30 ml) hoisin sauce
• 1 tbsp (15 ml) sesame oil
• 1 tbsp (15 ml) olive oil (extra for cooking)
• Seasonings: salt, black pepper, paprika, honey chili glaze
• Optional: sesame seeds, chili oil, and additional sliced green onions for garnish
Instructions:
1. In a small bowl, mix together the olive oil, soy sauce, hoisin sauce, and sesame oil. Set aside.
2. Cook the soba noodles according to the package instructions. Drain and set aside.
3. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and season with salt, pepper, paprika, and honey chili glaze. Cook until the chicken is browned and cooked through.
4. Add the minced garlic to the skillet and mix well.
5. Add the carrots and bell peppers to the skillet and mix.
6. Add the Savoy cabbage and green onions to the skillet and mix.
7. Pour the sauce over the chicken and vegetables and mix well.
8. Add the cooked soba noodles and toss everything together until well combined and heated through.
9. Taste and adjust seasoning with more soy sauce, salt, or pepper if needed.
10. Serve hot, add chili oil, and garnish with sesame seeds and additional sliced green onions if desired.
