This is a really simple video to explain what Indirect Cooking is.

To explain in words, Indirect Cooking, according to Weber's Grill On magazine is "good for big food...like chicken, roasts and lamb."

Place the lit briquettes on both sides of the charcoal grate - for instance using the charcoal baskets.
Place a disposable aluminium drip tray with a bit of water between the briquettes to catch any drips from the food. Put the lid on the barbecue.
Place the food off the grates using a Weber Roasting Rack over the centre of the BBQ.
