Ginger and garlic paste (very optional) adding of ginger and garlic paste is dependent on your taste, if you don't like ginger and garlic in your soup don't bother adding it
Akpuru Akpu Egusi soup is an expensive dish in igbo culture because it's been loaded with alot of animals in it from stockfish to dry or roasted fish of different species, to variety of meat from goat meat to cowmeat, bush meat and any other you can think of kpomo and the rest of it, not minding the huge amount of Egusi required for this dish. During occasions basins of Egusi is been used to prepare this delicacy that's to show how expensive it is because the Egusi itself is now very expressive because of it's high demand.
This is not the same as the ordinary Egusi soup one can prepare with few cups of Egusi and the soup will be all over the place, this one require more Egusi and most especially if you are cooking for a big family.
You can also decide to follow this procedure and prepare it the way your are seeing it on the screen and add it to your tomato or egg sauce.
