RECIPE
INGREDIENTS
FOR THE MARINADE:
8-10 GOOD QUALITY LAMB CHOPS
200ML THICK GREEK YOGHURT
1 CLOVE GARLIC CHOPPED/GRATED
1 KNOB GINGER GRATED SIZE OF GARLIC
1 RED CHILI CHOPPED
1/4 TSP TURMERIC
1 TSP GARAM MASALA (NOT CURRY POWDER)
1 TSP GROUND CUMIN
1 LARGE TSP BROWN SUGAR
1 TSP SALT
SQUEEZE LEMON 1 SMALL TBSP
2 TBSP OIL (NOT OLIVE, ANYTHING THAT HAS HIGH SMOKING POINT)
FOR THE RAITA:
HALF A CUCUMBER GRATED AND WATER SQUEEZED OUT
1 TSP TOASTED CUMIN SEEDS
200ML TUB THICK GREEK YOGHURT
HANDFUL OF MINT LEAVES, CHOPPED.
SEA SALT
(COULD ALSO BUNG IN SOME MINT LEAVES AS ITS LAMB)
RED OR WHITE ONIONS, SKIN ON.
METHOD
MIX UP ALL THE MARINADE INGREDIENTS AND SMOTHER THE CHOPS. LEAVE THEM FOR AS LONG AS POSSIBLE I.E. OVERNIGHT OR EVEN A COUPLE DAYS. THE LONGER YOU LEAVE THEM, THE LESS COOKING TIME YOU’LL NEED AND THE MOST INTENSE THE FLAVOURS WILL BE.
WHILE THE LAMB IS MARINATING, MAKE YOUR RAITA. COMBINE ALL THE INGREDIENTS, LEAVING HALF TSP. CUMIN SEEDS ASIDE. TASTE AND SEASON, SPRINKLE THE REST OF CUMIN ON TOP AND REFRIGERATE TILL YOU NEED IT.
ONCE YOUR BBQ IS ON, THROW YOUR ONIONS DIRECTLY ONTO THE COALS AND LEAVE THEM THERE THROUGH COOKING. YOU WANT THEM TO BE ON THE HEAT FOR 30-40 MINUTES TO COOK PROPERLY.
ONCE THE CHOPS HAVE BEEN MARINATING FOR LONG ENOUGH, GET THEM ON YOUR HOT BBQ. TURN THEM GENTLY, MAKING SURE THEY DON’T FALL THROUGH THE GRIDS GET A NICE GOLDEN COLOUR ON THEM, BUT BE CAREFUL NOT TO OVERCOOK.
