Cheesy Eggplant Roll Ups

⁠Ingredients:

2 Eggplants⁠⁠- ⁠1 handful parsley⁠1-4 t
⁠1 tsp salt⁠
Oil for frying

For the filling:

250g soft cheese
50g grated mozzarella⁠
20g grated Grana Padano or Parmesan
1 handful parsley
⁠1/4 tsp salt⁠
1 pinch of pepper and nutmeg

Sauce & Topping
70ml ho water
30g tomato paste
1 pinch of salt, pepper & oregano
30g grated mozzarella⁠

Instrictions:

Cut eggplants into slices, cover them with salt, and let chill for 3 hours. Then dab dry them with kitchen paper. Heat the oil and fry the eggplant slices from each side until golden. Put the fried slices on kitchen paper and cool down. Stir all ingredients for the filling together. Put 1 tbsp of the filling on each slice and roll them up. Put the rolls into a baking tin. Mix hot water, tomato paste, salt, pepper, and oregano. Put the sauce and the grated mozzarella on top. Preheat the oven to 180 degrees and bake them for 20 minutes. Enjoy!
