Hi! Today, I'll be making chili con carne that's a twist on the classic recipe.
Ingredients:
✅ 500g minced beef
✅ Olive oil
✅ 1 red pepper, diced
✅ 1 large onion, diced
✅ 1 red chili, finely chopped
✅ 2 garlic cloves, minced
✅ 2 tbsp tomato puree
✅ 1 tsp ground cumin
✅ 1 tsp dried oregano
✅ 1 tsp dried coriander
✅ 1.5 tsp smoked paprika
✅ 1 can chopped tomatoes
✅ 1 beef stock cube + 400 ml water
✅ 1 can kidney beans
✅ 2 squares dark chocolate
✅ Salt and pepper
Let's get started!
• Heat olive oil in a pan over medium-high heat and brown 500g minced beef for 10 minutes, breaking it apart, until it's fully browned and any liquid has evaporated. Once browned, remove the beef from the pan and set it aside.
• In the same pan, add more olive oil. Add the diced red pepper, onion, garlic and chili and sauté these for 5 minutes until soft.
• Stir in 2 tbsp tomato puree, 1 tsp ground cumin, 1 tsp dried oregano, and 1.5 tsp smoked paprika. Cook for 2 minutes to let the tomato puree and spices blend and cook out their raw flavors.
• Return the browned beef to the pan, add 1 can chopped tomatoes and 1 beef stock cube. Simmer for 45 minutes to 1 hour until thick and glossy.
• Add 1 can kidney beans and 2 squares dark chocolate. Cook for an additional 5 minutes.
• Season with salt, and pepper. Serve the chili con carne hot, with your choice of rice.
