This Fresh Pineapple Bread Pudding is both savory and sweet and, is an easy to make recipe. It has only a handful of ingredients including fresh pineapple, bread, eggs, butter, brown sugar, nutmeg, kosher salt, and apple cider. Serve along side baked ham, roasted pork or barbecue chicken.
Ingredients
8 tablespoons salted butter, melted and cooled slightly
2 large eggs, beaten
1/4 cup light brown sugar
1/4 teaspoon nutmeg
pinch of kosher salt
1/2 fresh pineapple, cut in 1 inch cubes, about 2 cups
4 cups cubed rustic bread, cut in 1 inch pieces
1/2 cup apple juice
