Waakye stew is very popular in Ghana which is often served with waakye. It can also be served with white rice, kenke and yam.
INGREDIENTS
To season meat
1medium size onion
Ginger 4 thumbs
3 cloves garlic
1tsp anis
1tsp rosemary
Magi shrimp seasoning
Salt to taste
Seasoned fish with salt.
Fried meat and fish with vegetable cooking oil
STEW
4 Onions
1/2 Green bell pepper
1/2 Red bell pepper
1/2 Yellow bell pepper
1 Habanero pepper
About a thumb of ginger
360g Tomato puree
400g blended tomatoes
Mackerel (africa queen Mackerel)
Tuna
Salt to taste
Spices for stew 1/3 tsp nutmeg powder or spice of your choice.
