General knowledge about which breeds of animals are suitable for which meat products is disappearing. Different animals and breeds are suited for different purpose. For example, one breed of pig may be good for sausages, while another is perfect for air-dried charcuterie. Revitalising this knowledge in our trade will give us a better and more nuanced understanding of the end-product and its uses.
