LOTUS ROOT STIR FRY
2 lotus root (2 lbs.)
2 tablespoons cooking oil
2 tablespoons chopped garlic
2 tablespoons chopped ginger
1 teaspoon 5 spice powder
1 teaspoon chicken base
1/2 teaspoon salt
1 cup chopped green onions
Clean and peel 2 lotus root. Cut lotus root in slices of 1/8 to 1/4 inch diameter. Heat a wok or pan at medium heat and add cooking oil, garlic and ginger. Stir fry briefly. Add lotus root and stir fry for 5 minutes. Add 5 spice powder, chicken base, salt and water. Stir fry for any additional 5 to 10 minutes. For more tender lotus root, cook longer. Add green onions in the last 10 minutes. Serve on a nice plate. Enjoy!
