250 grams flour
¼ cup milk
1 egg yolk
Pinch of salt
125 grams butter, cubed
200 grams ham, chopped
3 eggs
1 tablespoon Dijon mustard
Pinch of salt
100 grams heavy cream
50 grams butter
Instructions:
In a large bowl, whisk together the flour and salt.
Make a well in the center of the flour and add the milk, egg yolk, and mix with your fingertips until the dough comes together.
Add the cubed butter and knead until the dough is smooth and elastic.
Wrap the dough in plastic wrap and let it rest for 2-3 hours at room temperature.
Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit).
Roll out the dough as desired, melt 50 grams of butter over medium heat, and cook the ham until browned.
In a separate bowl, whisk together the eggs, mustard, salt, and cream.
Spread the ham over the dough.
Pour the egg mixture over the ham.
Bake for 50 minutes, or until the quiche is golden brown and set.
Let cool for 10 minutes before serving.
Additional notes:
You can also add other vegetables to the quiche, such as spinach, mushrooms, or bell peppers.
If you don't have heavy cream, you can substitute milk or half-and-half.
For a richer flavor, use Gruyère cheese instead of ham.
