Easy Egg Kurma
Let’s make an easy #egg kurma , Greta for breakfast or dinner and goes well with any appam , roti or rice also

I served it with shee appam (it’s for the sound shee when you pour in the pan ) , you can say it’s pachari dosa or rice crepes or neer dosa and my mom says kalki oyicha dosa
Egg Kurma
Egg -3 boiled
Potatoes-2 boiled
Cardamom-2
Cinnamon-1
Fenugreek-1/2 tsp
Onion -1 sliced
Ginger garlic paste -2 tsp
Green Chili-2
Tomato-1
Red chilly powder -2 tsp
Coriander-2 tsp
Cumin powder -1 tsp
Garam masala -1 tsp
Pepper powder -1/2 tbs
Turmeric-1 tsp
Cashew -6
Coconut -4 tbs
Raisins-1 tbs
Mustard seeds - 1 tsp
Dry red chilly-2
Cashew -4 nos
Garam masala-1/4 tsp
Curry leaves -1 tbs
Coriander leaves -1 tbs
Water -1/2 cup
Coconut milk -1 cup
Coconut oil
Salt
To a pan add coconut oil , sauté fenugreek , cardamom, cinnamon. Sauté onion and green chilly, add ginger garlic paste , sauté tomatoes , then add the spices coriander powder , red chilly powder , turmeric, garam a masala , cumin powder and salt . Make paste of cashew , raisins and coconut. Add the paste to curry . Then add the boiled potatoes and egg , water , coconut milk , curry leaves and coriander leaves . Boil the curry and then temper it . To pan add coconut oil and splutter mustard seeds , cashew , Garam masala and dry red chilly. Add this to curry and it’s ready to serve with appam or roti .
Rice appam (ari dosa)
Raw rice - 2cup soaked pachari or basmathi (soaked for 4 hrs or day ahead)
Coconut -1 cup
Egg -1
Shallots -3
Fennel seeds -1 tsp
Water -2 cup and more
Water and oil for basting
Grind all to a loose batter
Warm griddle very hot , add some water and bast the pan . Pour the batter there would be holes it’s fine . Close with lid and then open add some oil over and flip and cook other side .
