Duck roast
For this dish I used 2 full ducks , cut into 20 pieces . This serves 10

Preparing masala for duck roast
Fennel seed 6 tbs
Cinnamon sticks 4
Cardamom 12

Dry roast this masala under low flame. Grind this into powder. Sieve the powdered masala to get fine powder. Now again for the masala Slit dry red chilly 15 nos and remove the seeds.
Add this to powdered masala. Add 2 tbs turmeric powder. Crush fresh pepper 4 tbs. Add this to masala. Add the prepared masala to the duck. Add garlic, 30 cloves slit into half. Add salt to taste. Mix the dry roast masala and duck. Let it sit for 30 minutes for better taste.

Pressure cook duck with half cup water for 3 whistles. After first whistle simmer the flame.
Meanwhile will prepare potato for duck roast. Remove the skin and cut into desired shape , I like to cut lengthwise. Add salt , turmeric, and pepper. Mix well & heat in a pan . Add oil for frying potatoes. Remove this to a tissue layered plate. Now open the cooker once the steam has been let out. Check the meat is cooked. Transfer the cooked duck pieces to a plate & reserve the gravy. Use the same oil which we used for frying potato. Fry the duck pieces. Remove this to a plate. Take a kadai. Switch on the flame and use sieved oil used for frying duck. (As seen in video) Add minced onion 2 cups. Sauté until it turns brown. Add the reserved gravy of the duck. Simmer the flame and let the gravy thicken Now add the fried duck pieces. Add curry leaves. Let the masala coat on the duck really well. Add curry leaves. Add 1 cup thick coconut milk Simmer the flame Taste the gravy and add more salt if needed. Mix really well. Transfer to a serving dish Garnish with fried potatoes I like to serve this with Appam.
