(Levita) Nostra - Pizza Napoletana catering in Florida, USA
Behind the scenes of prepping 100 pizzas for an outdoor catering event in Daytona Beach, FL. It was about 90 degrees outside (August in Florida) so we make our dough with very low hydration, long room temperature fermentation, a very small amount of wild yeast (from Red Delicious apple), and 3% salt to ensure peak fermentation throughout the event!
