In this video i'm going to show you how to reverse sear a ribeye steak in a pellet smoker.

Here's the chimichurri recipe for your reference

- 1/4 cup finely chopped parsley
- 1/4 cup olive oil
- 1 finely chopped cayenne pepper
- 7 cloves crushed garlic
- Juice of 1/2 a lemon
- Pinch of hot chilli flakes
- Pinch of salt
- 2 tbs red wine vinegar

Then you can add bone marrow to your liking, or leave it out if it's not for you!

I think next time I reverse sear a steak in this unit, as the heat comes from below, i'll flip the steak half way through the smoking stage so it cooks more evenly. I did notice it had an uneven doneness to it, however it was still an incredible steak.
I might even play around and take the diffuser plate out for the sear too!
This was only my 2nd time using the pellet smoker so i'm keen to use it more and see what else it can do!
