This is the No Music, No Talking version of my video recipe on how to make Gingerbread cookies with royal icing and without molasses.
Gingerbread cookies are the most popular Christmas cookies. And there are so many recipes you can follow but have you ever tried a Gingerbread Cookies recipe without molasses. Of course, if you like molasses taste, you can use it, but if you can't find it, there will be no problem. You can bake delicious Gingerbread cookies using honey instead of molasses.
(I'm not such an artist in decoration, so please forgive my lack of skills in decorating the cookies, but I'm sure that, if you are more skilled, you can turn them out in such beautiful gingerbread cookies)
Gingerbread cookies:
spices:
ginger powder 1 teaspoon
cinnamon powder 1 teaspoon
2-3 cloves
a pinch of nutmeg
(add more spices if you like stronger flavors)
honey (or molasses if you like it) 125g.
butter 85g.
brown sugar 80g.
1 egg
a pinch of salt
flour 225g.
baking powder 1/2 teaspoon
baking soda 1/4 teaspoon
Royal Icing:
1 egg white
confectionery sugar 125g.
Instructions:
1. Melt the butter at a low temperature in a saucepan. Add honey and brown sugar. Once dissolved, add the spices and stir. Then let it cool down completely.
2. Once it reached room temperature, add the egg and whisk.
3. Pour the spice mix in a large bowl and start adding the flour mix (flour+baking powder +baking soda) and combine until you get a pretty soft dough.
4. IMPORTANT: Wrap the gingerbread dough in plastic wrap and store it in the fridge overnight. Please don't skip this step!
5. Next day, sprinkle some flour and roll out the dough by half a centimeter. Don't make it too thin! Make sure you roll out the dough while still cold.
6. Cut the dough into shapes and place your gingerbread cookies on parchment paper. Make sure you leave enough space between them!
7. Bake your gingerbread cookies in the preheated oven at 175°C for 10-12 minutes.
8. Meanwhile, in a bowl, add an egg white and a pinch of salt. Whisk with a hand mixer until slightly foamy and then start adding the confectionery sugar a bit at a time. Continue to mix until you get a nice and glossy royal icing.
9. Put the royal icing in a piping bag and use your skills and creativity to decorate your gingerbread cookies once they have reached room temperature.
10. You can store them in a food box with a lid for up to one week.

*I have chosen to make this recipe with honey and not with molasses because in some places it is really difficult to find molasses. But if you have it and you like it, feel free to use it instead of honey.
* In the video, you will see me rolling the dough out with a patterned rolling pin. It is not necessary. I have used it just because my regular rolling pin cracked (too old).
