I’m upland hunting for woodcock so I can cook roast woodcock, based on Hank Shaw’s recipe in “Pheasant, Quail, Cottontail”. This book has so many great recipes, but he also has an extremely expansive recipe collection on his website linked below. The only real liberty I took was to use a puffball mushroom rather than toast. Woodcock hunting is some really fun and challenging hunting requiring negotiating some really thick and thorny brush, and very quick shots at fast, small birds. I’ve never felt such success from such a small harvest of meat, but it really is a unique and very delicious meat deserving of such a tough hunt.
